Kick back with the fam this Sunday while your slow cooker handles the cooking. This hearty pot roast will not only feed you all tonight, but will also keep the leftovers rolling this week. Preparation
  1. In Sauté Pan, heat oil over medium-high heat. Season roast with salt and pepper. Place in pan and brown well on all sides.  
  2. Meanwhile, combine seasoning with water and tomato paste.  
  3. Add potatoes and carrots to slow cooker, then place the beef on top. Pour seasoning mixture over beef. Cover and cook on low 8 hrs or high 4 hrs.  
  4. To serve, remove beef from slow cooker. Slice and serve with sauce and vegetables from slow cooker.  
Tips

To thicken up that delicious sauce in the slow cooker, transfer liquid to a saucepan over medium-high heat. Whisk together 1 12 tbsp cornstarch with 3 tbsp of the sauce. Stir into remaining sauce, until thickened, about 1–2 min.  

Perfectly Balance Your Plate

Serve with a dinner roll, and 2 cups leafy greens with 1 tbsp Epicure Dressing.
