Time to squash those dinner dilemmas! Spaghetti squash steps in as a low-carb hero, bringing all the comfort and coziness of a traditional bowl of spaghetti, with a fun twist when you want to try something a little lighter. This dish takes all the best parts of jalapeño poppers—the creamy, cheesy, poppin’ flavours—and serves them up as a dinner that’s every bit as irresistible as the popper appy.  


Ingredients

Toppings (optional): Better Than Bacon Topper, sliced green onions 

Preparation
  1. Cut squash in half width-wise; remove seeds. Place squash halves, cut-side up, in Multipurpose Steamer. Season with 1 tbsp dip mix. Cover; microwave on high 12–13 min, or until tender.  
  2. Meanwhile, heat oil in Sauté Pan over medium-high heat. Add chicken; cook, breaking up meat using Ground Meat Separator, until meat is cooked through, about 4–5 min. Add cream cheese, cheddar cheese, water, and remaining 1 tbsp dip mix. Lower heat to medium; simmer until cream cheese is melted and combined, and sauce is thickened. 
  3. Use a fork to carefully scrape out flesh from spaghetti squash. Add “noodles” to pan; toss with sauce to combine. Add toppings, if desired.  
Tips

When removing the “noodles” from the spaghetti squash, place an oven mitt on your non-dominant hand to hold the hot squash. Then, using your dominant hand, scrape out the noodles using a spoon or fork.  

To elevate your dinner presentation, re-stuff the empty squash shells with the spaghetti squash mixture, top with extra cheddar cheese, and bake in preheated 375° F oven until cheese melts, about 5 min.

Serve with 1 whole-wheat bun and 1 cup roasted veggies.
